Like a lot of PDF tools, converters & such, PDF Converter Pro is a bit of a front end to existing freeware or open source apps -- in that respect it's a bit like the many ffmpeg-based video converters that are often so similar. [Note: The other day Ashraf gave away an app on a Facebook page -- in his instructions he pointed out how hitting the Tab key repeatedly eventually placed the mouse cursor in the proper Name & E-mail fields, though you had to look closely because they were blocked by the semi-transparent Facebook layer]
At any rate, the main reason for this post is to point out Tesseract -- open source OCR software used by PDFMate PDF Converter Pro & a lot of other programs &/or GUIs -- because at least a few folks in GOTD comments seemed interested in the OCR end of things.

Wikipedia links to the site where you'll find downloads, translations etc. -- I linked to Wikipedia rather than the site because their article talks about some of the limitations that can take you a while to find otherwise. It likely will Never work for top -> down or right -> left languages for example.
